Legendary pokemon are different from regular pokemon in that they can't breed and they never die from old age. However, they can die from wounds or illness.
If they can't breed then how is a new legend born? The instant an old legend dies Arceus reincarnates them, he drops down an egg in a new location and the new legend is hatched from it. The new legend that is born from the egg can be completely different personality wise or appearance wise (shiny or a different color) though they will be endowed with the memories of its previous incarnations. Usually it takes a few years before they can sort the memories out.
Legendary pokemon can be either gender, it matters not what their previous incarnation was. They can even be larger or smaller than the average size for their species.

The exceptions to the normal rule of legendaries is Arceus, Genesect, and Mewtwo.
Arceus is the great god of all pokemon and thus never dies. No one knows how old he is, as he is as old as time itself. He is the creator of all legendaries and has no previous incarnations.
Genesect and Mewtwo were man created and thus have no previous incarnations. They cannot die from old age however just like other legendaries they can die from wounds or illness but they won't be reincarnated.
